It happened again. We had a geuze dozing off; it ‘doesjelt’, a local dialect for drowsiness. Where this beer should have been an Oude Geuze 750ml, it did not referment in the bottle… and we can only say that it is proof that we can’t control everything in this beautiful beer style and we don’t want everything under control. We measured the residual sugars left in the beer and there’s really no reason why the carbonation didn’t start, it just didn’t happen. No problem, this turns out to be a beautiful, flavoursome, deeply balanced pure lambic and we are sure the fans will love it.
